The first Cora restaurant opened in a snack bar in Ville St. Laurent in 1987. The dynamic creator, Cora Tsouflidou, was quickly designated “Canada’s Queen of Breakfast.”
The Cora concept, an all day breakfast, was easily adopted by native Montrealers. Their penchant for late night socializing followed by early mornings at the office made breakfast in Quebec a must-have for refueling energies.
Cora quickly established herself with a menu of core "comfort foods” recipes rooted in the memories of her childhood home in the Gaspé Peninsula.

She may have thought she was retiring, but in fact, she just changed her role. Through her artistic abilities, Cora created all of the original graphics that decorate the walls of a Cora restaurant. She not only created the menu and the concept of a breakfast and lunch restaurant, she also designed the Sun Logo brand. It’s a symbol that is both caring and comforting and has attained a level of assisted brand awareness of more than 95% in Quebec.
As an innovator and smart strategist, Cora got much of her business education from the hundreds of books she’s read, learning and implementing best practices from some of the worlds’ most successful companies. Nicholas is President of Cora. He has been with the company since inception, taking whatever role was necessary to move the company forward. When he was 15 he worked in the first restaurant, At 19 he was managing one of the stores, and at 24 he was managing 200 employees.
Nicholas has a vision for the growth of the Cora chain. His vision is to develop the rest of Canada, handling the challenge of finding the right people and getting them properly trained. He believes in growing the company through existing employees, encouraging them to move through the ranks and consider owning a franchise. His statistics show that a substantial number of Cora employees will become owners.
His expansion plans include all of Canada, with numbers reaching 200 stores by the year 2012. Succession planning has been an important part of the growth of the company and the relationship between mother and son has always been one that works. The Cora philosophy is to set people up to win, to encourage, to support and mentor. While he calls Cora Tsouflidou, “Mom”, he is no Mama’s boy – he can make decisions and can stand his ground. His experience in all phases of the business made it a natural progression for him to assume the role of President.

My plans include expansion of this location and to open another store on the north side.
